This evening I made some gluten free, carbohydrate free “bread”. It’s not quite bread, of course, but it is a surprisingly good substitute and did well for a bacon sandwich. I have stored some in the fridge to eat later and I suspect they will do just fine for soaking up gravy or with soup.
Ingredients
Makes approximately 24 gluten free, carb free flat-bread patties.
- 6 eggs
- 6 tablespoons (small pack) of cream cheese (milk)
- Half a teaspoon cream of tartar (or baking powder)
- Pinch of salt
Preparation
Pre-heat oven to 150 degrees Celsius (300 degrees Fahrenheit)
Separate the eggs carefully making sure not to get any yolk in with the egg white. Add the cream of tartar and whip at high speed until the whites for stiff peaks. My youngest daughter took on this task and whisked the eggs to perfection in my ancient copper bowl.
Add the small pack of cream cheese to the egg yolks with a pinch of salt and mix thoroughly. It’s better to let the cream cheese come up to room temperature first if you can as it then mixes much more easily.
Fold the egg yolk mixture gently into the whisked egg whites. Fold rather than stir the mixture to keep the egg whites as fluffy as possible.
Spoon the mixture onto a baking sheet. I found that the mixture in the very bottom of the bowl was too sloppy to form into a patty. So, I made myself some slightly peculiar scrambled eggs.
Cooking
Place in a pre-heated oven for 20 minutes. Don’t open the oven while cooking but keep your eye on them through the glass front from about 15 mins. Cook until golden brown.
Take the baking sheet out of the oven and allow the flat-breads to cool before attempting to remove them. Use a small spatula to lift them off one at a time.
The cooked flat-breads really do look like little bread patties.
The patties even had the consistency of bread inside.

We tried them simply spread with butter and then, in the interest of science, I made a bacon sandwich. It was delicious and the patties were perfect as a bread substitute. Guests may feel free to request these patties as a gluten-free, carb-free option when dining at Barnutopia.
